Looks great. I might serve with a few baked corn tortilla strips on top for some great texture! Your friend is right, beans are a great source of protein and have loads of fiber. They are rich in B1 (thiamine) and lots of various minerals. And beans, when coupled with rice, will give you a protein more complete than any corpse (meat) product!
